12 Pages of Apps on a Standard iPhone

After installing an app the screen flashed, the iPod icon appeared on the bottom menu bar (I usually just keep 3 apps on it) and it alone started jiggling but without a cross on its top left. I thought that I had lost all my apps but a twelfth page had appeared.
I didn't want the app to disappear into nowhere land so when I moved the one app off the page and the page vanished.
Update: The twelfth page appeared again. This time I moved apps into the empty-bar-one-app page that I didn't mind if they became invisibles. Then I moved the the app I want as an icon to a 'safe' page. Then I Synced. Result - the twelfth page became populated with previously invisible app icons. When iTunes re-populates a page, it starts with app with number names e.g. 1Password, then A through Z.
I wish I could choose which app icon showed on my iPhone and which are invisible. I can make new app visible by 'pushing' an app off the very last visible page then buying a new app and the new app will fill the vacated space. What I cannot do yet is make a space then fill it with an app whose name starts with a letter higher than 'C' of apps that I already have.
